ORANGE-BLUEBERRY RICE PUDDING Serves 6

 

Zest and juice of 1 orange

Vanilla soy or rice milk to make 2 cups when added to orange juice

1/3 cup arrowroot

cup fruit sweetener

tsp. salt

2 cups cooked brown rice

1 cups fresh or frozen blueberries

**Preheat oven to 325 degrees.

**Spray 9" x 9" baking dish with oil.

**Combine orange juice and zest with milk, arrowroot, fruit sweetener,

and salt in a blender.

**Pour over rice, mix and pour mixture into baking dish.

**Bake 35 minutes or until thick.

**Remove from oven and spread blueberries on top.

**Return to oven and bake 15 minutes more. Pudding thickens as

it cools.
