SESAME TOFU SALAD 6 SERVINGS
2 tsp. brown rice vinegar
2 tsp. brown rice syrup
2 tsp. toasted sesame oil
1 tsp. turmeric
salt & pepper to taste
¼ cup Nayonnaise or miracle whip
1 pound low-fat tofu frozen, thawed & crumbled
¼ cup celery
¼ cup thinly sliced green onions
¼ cup soaked & drained hijicki (found in Oriental store, sometimes
called hizicki).
¼ cup sesame seeds
---In a small bowl combine vinegar, rice syrup, sesame oil, turmeric,
salt & pepper, mayo, & mix well
---In a medium bowl crumble tofu. Add mayonnaise mixture & mix
well. Stir in celery, onion, hijicki, & sesame seeds.
---Cover & refrigerate several hours or overnight for flavors to
blend.
