SPICED CABBAGE & APPLE SLAW     Serves 8

 

2 cups shredded cabbage, red and/or green

1 cup chopped red delicious apple

cup chopped celery

2 TBSP. Roasted soynuts chopped

2 TBSP. Raisins, golden or black

cup soft tofu

2 TBSP. Unsweetened apple juice

1 TBSP. Honey

1 tsp. Ground cinnamon

 

1.      Combine cabbage, apple, celery, soynuts, & raisins in a bowl and toss well.

2.      In a blender or processor blend tofu, apple juice, honey, & cinnamon. Pour over vegetables.

3.      Cover & chill at least 30 minutes
