LAYERED SUMMER SALAD SERVES 4

 

1 large yellow pepper julienned

2 TBSP. lemon juice (or 2 lemons)

cup extra virgin olive oil

salt & pepper

Mix all of this into a bowl. Transfer to a clear bowl. Repeat layering

in this clear bowl with some lemon juices & some extra virgin

olive oil or if you prefer pour amongst the layers already mixed

together:

2 TBSP. lime juice

2 TBSP. orange juice

2 TBSP. grapefruit juice

2 TBSP. raspberry wine vinegar

Spread into a thin layer layering:

1 large red pepper julienned

1 large orange pepper julienned

20 radishes thinly sliced

6 medium carrots shredded

Leave sit for a bit to allow the juices to cover all of the vegetables.
