MANGO AND CORN SALSA 3 ears of fresh corn
1 mango peeled and diced
1/4 cup minced red onion
1 jalapeno or serrano pepper seeded and minced
juice of 1 lime
2 TBSP. fresh cilantro
Mix all ingredients together. Cover and refrigerate 30 minutes to
allow flavors to blend.
Can omit corn if desired.
Good with potato cakes, tortilla chips and I use the leftovers on
wrap sandwiches. YUM!!
